Meet Paul Ballen, master ice cream maker extraordinaire

Paul Ballen is the founder and owner of Pauls' Homemade Ice cream. He grew up in Johannesburg with and American dad and South African mom. But spent summers with his photographer father's family in New York City.

I became fascinated by the amazing ice cream culture in the States and through my childhood and teenage years, I started to develop an acquired palate for food stuffs and enjoyed cooking.

Then luckily enough, for my 21st birthday, I got an ice cream machine and started working with different ice creams in my parents' kitchen.

I saw there was a huge gap in South Africa. There was no existing ice cream culture, and no appreciation for amazing ice cream.

This was the beginning of Paul's journey in 2009 which lead to Paul's Homemade Ice Cream.

The business moved form his parents' kitchen to their garage where he churned ice cream in small machines on trestle table - and eventually moved into its own premises.

It's all about the experience of the product and the individual knowing how this ice cream is made in the best possible way.

Paul teamed up with his university friend and now business partner Josh Amoils and together he says they make a great team. Together they began getting the product to markets and have been growing ever since.

he sees they are not interested in a big take over by one of the big ice cream companies.

We are really proud of our brand and we don't want machines to make our ice cream.

The bigger guys use these huge machines, something called a continuous batch freezer. So they have these huge tanks they store dairy in - and a lot of them do not even use dairy so they can't even call it ice cream.

We pride ourselves in the fact that we use real dairy, real milk, real cream, real fruit and real high quality chocolate.

Flavour development is one of Paul's passions and they create amazing new flavours. The apple pie ice cream is made from real apples, says Paul proudly.

He says they want to build a creative ice cream culture here so that South Africans will start to appreciate real ice cream.

Business partner Josh Amoils says Paul is the creative genius and he is the numbers guy.

Josh says it is a great combination and they do not butt heads.

The company is also committed to upskilling their passionate group of employees and creating a good working environment.
