Defeating the woes of loadshedding with Jenny Morris

In the food feature this week, Pippa served up a double helping on the show with the usual Giggling Gourmet, Jenny Morris and Justin Bonello the Ultimate Braai Master.

We are all affected by load shedding and we sometimes get frustrated not knowing how and what kind of a meal to prepare for our family without electricity. Jenny and Justin spoke about braaing and load shedding gave them a perfect excuse to talk about the art of the braai and how to prepare a perfect meal without the help of electricity.

RECIPES FROM JENNY MORRIS:

Preserved lemon dressing

2 tablespoons capers, deep-fried and chopped
½ preserved lemon rind, finely chopped
½ cup roughly chopped flat-leaf parsley
½ cup roughly chopped mint
6 tablespoons olive oil
Zest of 1 ripe lemon
½ cup freshly squeezed lemon juice
1 clove garlic, crushed
Salt, to taste
Freshly ground black pepper
Shake it all up together and spoon over grilled or poached fish.
Makes 1 ½ cups

Minty caper and parsley dressing

2 tablespoons baby capers
1 chilli, finely chopped
2 tablespoons finely chopped red onion
3 tablespoons finely chopped Italian parsley
3 tablespoons finely chopped coriander
2 cloves garlic, crushed
2 tablespoons lemon juice
4 tablespoons olive oil
2 tablespoons chopped mint
Salt, to taste and freshly ground black pepper
Mix it all up in a blender adjust the seasoning and serve.
Shake it up in a jar to blend
Serves 4
