How to make Pad Thai (the world’s 5th most delicious food, according to CNN)

If you’ve ever been to Thailand you’ll agree – they make the best food in the world.

Even the cheapest street-food is delectable!

A case in point; the world-famous Pad Thai.

According to CNN, Pad Thai is the fifth-most delicious food in the world.

Here’s how to make it:

Ingredients

  • 300g Flat dried rice noodles

  • 2 Tbsp (30ml) peanut or coconut oil

  • 1 Small red onion, chopped

  • 4 Spring onions, sliced

  • 3 Chillies, sliced

  • 2 Fat cloves garlic, crushed

  • 3 Tbsp (45ml) fish sauce

  • 1 Tbsp (15ml) Shaoxing rice wine or dry sherry

  • Juice of 1- 2 limes

  • 2 Tbsp (30ml) light soy sauce

  • Salt and milled pepper

  • 1 Tsp (5ml) sugar

  • 2 Tbsp (30ml) oyster sauce

  • 1 Cup (250ml) bean sprouts

To serve

  • Handful fresh coriander

  • 3 Tbsp (45ml) coarsely chopped roasted peanuts

Method

  • Soak noodles in boiling water until tender. Drain and set aside.

  • Heat a wok over high heat and add oil.

  • When slightly smoking, add onion, spring onions, chilies and garlic, and stir-fry for a minute.

  • Add rice noodles and remaining ingredients and continue to stir-fry for two minutes, mixing well.

  • Spoon into warm bowls and serve at once topped with coriander and peanuts.
