How to make sweet and tasty ricotta (with berries and caramelised almonds)

The production of ricotta in the Italian peninsula dates back to the Bronze Age.

Now, you can perfect what they started!

Here’s how to make sweet ricotta with berries and caramelised almonds – the ideal light meal for the South African summer!

Ingredients:

  • 100g blanched almonds

  • 100 g castor sugar

  • 100 g mixed berries

  • Sweet ricotta

  • 400 g ricotta

  • Seeds from ½ vanilla pod

  • 3 Tbsp (45 ml) icing sugar

  • 3 Tbsp (45 ml) dessert wine or medium cream sherry

  • ½ Cup (125 ml) cream, whipped to soft peak stage

Method:

  • Roast almonds in a 180C oven for about 5 minutes, until lightly coloured.

  • Place sugar in a pot with a Tbsp of water.

  • Cook, without stirring, until sugar melts and turns golden.

  • Add nuts and cook for a minute.

  • Pour onto an oiled baking sheet and cool.

  • When set, pop into a bag and bash with a rolling pin.

Sweet Ricotta:

  • Beat ricotta, vanilla, icing sugar and sherry together.

  • Fold in cream.

  • Spoon ricotta into glasses, top with berries and almond brittle.
