Take "Fantastic Beasts and Where to Find Them" for example. A whole new story created from a textbook used by the students at Hogwarts.

A group of super cool muggles have seen another opportunity for a spin-off: 'Voldemort – Origins of the Heir.'

They want tell the story of the early life of Voldemort, the super villain of the Harry Potter saga. Exploring how Hogwarts student, Tom Riddle, transformed into the Dark Lord.

These muggles are from a young production house called Tryangle. They have created this awesome trailer:

To create the film they have organised a crowdfunding campaign on Kickstarter.com.
