[LISTEN] What does 'GI' in low GI bread mean and what are the health benefits?

If you have ever wondered what the 'GI' on some bread labels means, it stands for glycemic index and rates foods on a scale of 1 to 100 based on how they affect your blood sugar.

Naked Scientist Chris Smith explains how the GI impacts your blood sugar, as well as the health benefits.

Lower GI foods are made up of more complex carbohydrates.

They take longer to be released by enzymes and digestive juices, so the sugar trickles out from the foodstuff at a steadier rate. It doesn't peak in the blood so quickly and it stays elevated for longer.

It keeps you fed for longer and feeling less hungry for longer, but it doesn't produce that very high departure that would lead to a large release of insulin.

In order to eat a healthy diet that is beneficial to weight or diabetic control, choose low GI foods which will reduce large surges of glucose and sugars in your blood which provokes insulin, he concludes.
